Sorry there are no pictures, but I forgot to take some. A few folks have asked for the recipe since I mentioned making them. It’s a recipe from Verrill Farm, where I work part-time. They also sell them pre-made, but I wanted to give them a try at home.
1/2 cup finely chopped onion
1/2 tsp chopped garlic
1/2 cup shredded carrots
1/2 tsp kosher salt
1/4 tsp black pepper
1/2 tsp cumin
3 cups kidney beans (about 2 cans)
1/3 cup chopped scallions (green part only)
1 tsp soy sauce
1 tbsp Dijon mustard
1 tbsp catsup
3/4 cup oatmeal (old fashioned)
1/4 olive oil (this seems like a lot of oil--the burgers I fried using less held together better)
- Saute onions, garlic and carrots in a little olive oil. Mix salt, pepper, cumin, scallions, soy sauce, mustard and catsup--blend with carrot mixture. Then fold in oats. Portion mixture in 1/4 cup burgers. Pan fry in olive oil. Makes 12 2oz. burgers.
I’m freezing a few now and will report back on whether they freeze well.
